Flan de Caramelo

1 Round mold
1 Non-stick pan
1 Blender
Aluminum foil
1 Deep baking tray
For the mixture
- 4 eggs
- 1 can evaporated milk 12oz
- 1 can condensed milk 14oz
- 1 tbsp vanilla
- 1 pinch salt
For the caramel
Pour a cup of white sugar in a non-stick pan
Place the pan on your stove and graduate the heat accordingly so that it doesn't burn. Usually medium to high heat.
Pay close attention and when the sugar starts melting you can stir a little to help it melt evenly.
When all the sugar melts and takes up an almost cinnamon color, cut the heat and start pouring on the round mold.
Grab the mold with gloves and carefully move it so that the caramel spreads evenly at the bottom and sides of the mold.
When the inside of the mold is completely covered, set it aside to cool.
For the mixture
(Optional) in a separate container, open each egg to verify it's not rotten.
Crack and place the four egg yolks and whites inside the blender cup
Pour a whole can of condensed milk and a whole can of evaporated milk inside the blender.
Add 1 tbsp of vanilla to the mixture and a pinch of salt.
Blend it all together until everything incorporates.
If needed, use a plastic spatula to scrape the sides of the blender cup of left over eggs whites and blend again to incorporate.
Preparation
Preheat oven at 350 degrees Fahrenheit (℉).
Place water on a pan and let it simmer. We'll use it as a double boiler with our mixture to place it inside the oven.
Pour your blender mixture in the mold with the caramel
Cover the mold with aluminum foil
Place the covered mold inside a deep baking tray and carefully pour the hot water around the mold to submerge it about half way
Place the baking tray with the mold and the hot water inside the heated oven and bake for 40 minutes.
After the 40 minute mark check the flan with a wooden pick. If it comes out clean then it's ready.
